Freekeh, a grain with a nutty and smoky taste, has been a staple in Palestine, Syria, and Jordan for centuries. Legend has it that it originated in a small eastern Mediterranean village, where an attack led to the discovery of edible grains after the wheat crop was burned. Harvested early, freekeh retains high moisture, preserving its nutritious kernel. With twice the fiber of quinoa and four times that of brown rice, it's considered a nutrient-dense superfood. Ideal for soups, salads, and various dishes, freekeh is celebrated for its health benefits and unique flavor.
